Abby & Liz went to see Beauty and the Beast at the Palace Theater in Waterbury today with Uncle Mike, Tonio and the girls.  That left Wyatt and I home to relax.  Last night was a late one after we attended a nice 60th birthday party down in Chappaqua, NY. (No Clinton sightings)  The party was fantastic and I helped myself to the oysters on the raw bar.  Unfortunately there was a wind and rain storm last night that made the 2 hour drive down and back a real white knuckle trip but it was worth it.  After laying low today, the boy and I decided to make some homemade pizza for dinner.

Here's the pie we put together and it's a pretty low-cal, healthy recipe.  Everyone has their own style for making pizza but here's how Wyatt and I rock it:

Whole Wheat Pizza a.k.a. A Little Slice of Heaven...

Ingredients:

  • 1 pound whole wheat pizza dough (make sure the dough gets to room temp first)
  • 1 jar pizza sauce
  • 7 oz. fat free shredded mozzarella
  • 1 tbsp. olive oil
  • seasonings to taste
  • toppings to taste

To start with you'll want to use a pizza stone.  If you don't have one then a baking sheet will do.  Assuming you have a stone, drizzle some olive oil on it and then rub it in with a paper towel.  Depending on how seasoned your stone is, you may not need much oil.  I use a pizza rolling tool type of thing that I then coat with the oil I picked up on the paper towel.  Once the stone is set I like to sprinkle a little garlic powder and fresh ground pepper on it.

Spread the dough out as evenly as possible.  I like to sprinkle some more garlic powder, fresh ground pepper and Italian seasonings on at this point.  It's important you let the dough get to room temp before spreading it.  You might notice my dough and crust is pretty pro but don't be discouraged if you can't hang just yet.

Now here's where I take a slight departure from the traditional approach.  You should be preheating your oven to 450 degrees.  I like to put the dough in for around 7-10 minutes to let it brown up.  Me and Wyatt like a crispier crust and this helps get it there without destroying the cheese and toppings. Here's Wyatt and he agrees:

So once the oven hits 450, pop the dough in for a bit and let it brown up.

Now it's fun time and you can put on your toppings.  Start with the sauce and use a large metal spoon to spread it around evenly.  From there add the cheese and whatever toppings you like.  We did a 1/2 and 1/2 with plain cheese on one side and veggie on the other. (onions, green peppers, black olives and Roma tomatoes)

Put the pie in the oven for around 8-10 minutes or until it's "done" to your liking.  The side with the toppings will cook more slowly than the side without as you can see below.

Slice the pie up and enjoy!  A pizza slicer is always a good tool to have around for this kind of thing because they are designed for the express purpose of slicing pizzas and pizza like food objects.  I had some salad with my slice(s) with a little fat-free sun dried tomato dressing.  Wyatt had his with apple juice and some cake Liz and Abby brought home with them.
